There is a pool of stillness at its centre, encircled by eddy-lines of finely laminated, silvery acidity – intricate, tensile acidity that is the hallmark of Limoux. Luminous fruit. A wine of compelling beauty that has years ahead of it.

I am tasting bottle 849. Amazing nose. Powdery and scented, the smell of ground almonds and honey, of mimosa flowers and cucumber peel. And if ever a wine wrapped itself around you like a cat in a cashmere scarf, Trilogie 2017 is it. If you could make a paste of late-summer honey, ground almonds, cardamom and borage leaf, and turn it into wine… Crystals of acidity spiking through the richness like a scatter of tiny diamonds sewn into that cashmere scarf, catching the light, rippling with laughter through a mouthful of seriously beautiful wine.
Je déguste la bouteille 849. Nez incroyable. Poudré et parfumé, l’odeur d’amandes moulues et de miel, de fleurs de mimosa et d’écorce de concombre. Et si jamais un vin devait s’enrouler autour de vous comme un chat dans une écharpe en cachemire, ce serait la Trilogie 2017. Si vous pouviez faire une pâte à partir de miel de fin d’été, d’amandes moulues, de cardamome et de feuille de bourrache, et la transformer en vin … Des cristaux d’acidité jaillissent à travers la richesse comme une dispersion de minuscules diamants cousus dans cette écharpe en cachemire, captant la lumière, ondulant avec un rire à travers une bouchée de ce très beau vin.

Light golden, with some herbal fruit on the palate, lightly rounded and nicely textured with good acidity. 2017 was a difficult vintage because of the frost, which is pretty unusual in the region.

Lovely waxy aroma from the Chenin Blanc, creamy texture and mealy notes with a lovely rice cake sort of aroma, plus honey and slate. Lots going on here – genuinely interesting and complex.
Immediately very complex and arresting on the nose – quite a contrast to Le Limoux! Very ripe fruit but a bone-dry wine with vivacious acidity. Very slight (positive) matchstick reduction on the nose and massively rich, ripe fruit. What’s not to like? Wonderful breadth and length on the palate. I’d hate to be given this wine blind! But I think I’d still love it. The 1,300 bottles will not be released until 2017 but it’s already gorgeous.
Drink 2016-2021
A blend of the best barrels each year, making just 1-2000 bottles per year. They taste each barrel each month and see how things are developing. Lots of nuances and depth with balancing acidity and structure. Quite a firm youthful finish. Definitely a wine that will develop in bottle.
Chardonnay, Mauzac, Chenin Blanc. Less than 3,000 bottles made.
A glorious nose that held me captivated to the glass. Brocaded richness across a broad plane, oranges and clementines spun through a spiced palate, and despite the breadth a wine that is precise and fine and shimmering and effortlessly long. Just so, so good! (TC)
Le fruit est très mur au nez, la pomme frippée, la poire compotée, le citron confit avec des notes d’orange. C’est en bouche que le vin se développe, avec rondeur et fondant. On goûte la pomme caramélisée avec une acidité fruitée en finale. Un équlibre pour accompagner le repas, avec une lotte au safran.

The final wine is their top wine, a little bit more expensive than the others and a lot more limited in quantity. Rather than being the product of a single vineyard, it is a selection of the barrels of Chardonnay, Chenin Blanc and Mauzac, that they feel are most interesting. It is a wine that is intended to show the best of its respective vintage, so the proportions of Chenin/Chardonnay/Mauzac vary with each vintage, and it isn’t made every year. I can’t find a tech-sheet for the 2014, so I don’t know the exact composition for this tasting, and nor do I know how much new oak was used to raise this wine. Again, I am impressed by this wine. The nose offers up some ripe, almost tropical fruits with notes of sweet apricot, honeysuckle and mango. There is a delicious sweet spice character – cinnamon, vanilla, butter toffee and toasted hazelnuts. These qualities follow onto a concentrated, complex and well-balanced palate that also delivers a bit of stony minerals and hay on the finish. It is a unique wine, perhaps not for every day. I say that not only because it is expensive for me, but also because it is complex and to get the best out of it requires a little bit of time and patience. To wantonly slake your thirst with this wine would be a waste.

Fine, clear-cut acidity and the Chenin muscles in and makes its presence felt rather more than the Chardonnay. A fine balance and satisfying, though not quite as thrilling as the 2015. Just a whisper from the 25% new oak used for the barrels selected for this blend.

Clean, pure, balanced, and with a clean, dry finish, it will be versatile on the dinner table and should have an interesting evolution over the next 4 – 5 years.

The Chenin drives the whole with Chardonnay providing mere balance. Lovely texture yet again. Gaining richness in the glass, it will be versatile on the dinner table and drink nicely for a year or two.

The Mauzac seems a very minor ingredient in this particular bottling. Really satisfying mouthful with great presence and persistence that seems to have years ahead of it. Here too there is a whiff of wood framing the nose that is comprised of petrol, white orchard fruit and soft floral nuances. There is fine volume to the round and vibrant middle wight flavors that possess good detail and on the nicely complex finish that delivers fine length on the mildly oaky finish. This isn’t especially refined but there is certainly fine depth and persistence. This too delivers fine value. 88 pts

Only bottled two weeks ago, this is a blend of all three Limoux varieties, with 50% Chardonnay, the remainder Chenin Blanc and Mauzac. It is selected from the best barrels and then blended. Obviously youthful on the nose, with sweet and aromatic fruit with a pear character. The palate is really very good; full and sweetly endowed, with notes of jasmine over the pear fruit. Elegant,floral, balanced and aromatic, with a little meatiness towards the end, this is very good indeed. 17-17.5+/20 (July 2009)
… retasted in July 2012: Perhaps the domaine’s most successful wine, this is a blend of the three varieties of Limoux, Chardonnay, Chenin Blanc and Mauzac. There is also some oak here too, as evident on the nose, which although attractive with its sweet citrus tones reminiscent of orange zest and orange oils, rich and defined, there are also cashew nut edges from the barrels. I also find some peachy notes, and a scented character, giving it a very lightly musky edge, as well as hints of acacia. On the palate it has a sense of tense, structured poise, with lightly pithy fruit, dry and grippy, with good fruit texture. There is still quite some grip reflecting the oak élevage here. And it is still very primary, at not-quite four years of age. Clearly there is some serious potential for further development here, a thought reinforced by the wine’s sappy, lengthy, grippy finish. This is one that should have been left in the cellar.
