“Gastronomy walks on two legs, a solid balance between food and wine” says the respected French wine writer Pierre Casamayor in his introduction to the Guide Hubert’s selection of the best restaurants and the best wines.

Nadine Adenis, responsible for the southern half of the French selection, adds that although the years between 2014 and 2016 were often chaotic “it is under these adverse conditions that the talent of the winemaker often expresses itself best”.
