Ronald de Groot, the editor-owner of a leading Dutch wine magazine, Perswijn, engages in a long and wide-ranging interview with Jan and Caryl Panman, founders of Rives-Blanques, covering the reasons why Limoux’s special terroir  lends itself so well to white wines, the difficulties facing organic viticulture, and the virtues of the Mauzac grape.  “It takes a long time to get to know your vineyard”, the owners told the writer, as they stand on the cusp of their 20th harvest.
