Joy bubbles over in the glass

through the grapes’ golden blood

– ODE TO JOY, Friederich Schiller, 1785

Aude à la Joie

Appellation: IGP Haute Vallée de l’Aude

Grape variety: Chenin blanc

Only 3500 bottles of this chenin blanc were made. And that thanks only to the generosity of the 2019 harvest, which extended a hand and opened a window to the possibility of making this wine.

“Aude to Joy” was last made in 2016, and we feel the 2019 vintage is a worthy successor.  Unlike our top AOP Limoux Chenin blanc, Dédicace, Aude à la Joie was  fermented in stainless steel tanks, with brief ageing in French oak barrels.

Its natural minerality softened by southern sunshine, make this a wine that will go down well as an apéritif, but also to accompany seafood and shellfish, as well as spicy Asian dishes.  We expect it to age extremely well.

“Summery bouquet of white flowers and lanolin, ripe lemons, white-pepper quatre épices. That spiciness, gently tingling,  with its two layers of fresh coolth and a deeper warmth, fills the mouth …”
